Chicken Fiesta

Ingredients

8 boneless skinless chicken breast halves

1 onion, chopped

1 green bell pepper, chopped

1/4 cup olive oil

2 cups chopped tomatoes

2 cups salsa or picante sauce

1 lb linguine, cooked in boiling water 10 minutes and drained

2 cup cheddar cheese, grated

2 cups black olives, sliced

1 cup green onion, chopped

Directions

Grill or broil chicken breasts until almost done.

Sauté onion and pepper in the olive oil until onion is clear, about 5 minutes. Add the chicken, tomatoes and salsa and simmer until heated through, about 3 minutes.

Place hot, cooked pasta on a serving platter. Spoon chicken mixture over pasta and cover with cheese, olives and green onions.
